One Pot Mexi Chicken Pasta

Ingredients

  • 2 cups chicken broth*
  • 2 ½ cups water
  • 1 teaspoon garlic salt
  • ½ teaspoon pepper
  • 1 teaspoon red pepper
  • 1 package fajita chicken (meat case)*
  • 2 tablespoons olive oil
  • 1 onion, sliced thin*
  • 1 green bell pepper, sliced thin*
  • 1 container grape tomatoes*
  • 1 bunch cilantro
  • 1 jalapeño, chopped (optional)
  • 8 ounces Velveeta, cubed
  • 1 (16 oz.) package Fettuccine noodles*

Instructions

  1. In a large stockpot over medium-high heat, add olive oil and sliced chicken.
  2. Sauté until seared on all sides.
  3. Add chicken broth and water, garlic salt, pepper and red pepper.
  4. Place all of the ingredients in the pot.
  5. Bring to a boil and cook for 9-11 minutes.
  6. Periodically stir using tongs until noodles are tender.
  7. Serve!
