Zippy Roasted Cauliflower

Ingredients

  • 1 head cauliflower *
  • 2 teaspoon olive oil
  • 1 teaspoon dried rosemary
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon salt
  • 1-2 teaspoons minced garlic *
  • 3 tablespoons shredded parmesan cheese*
  • 1 teaspoon minced flat-leaf parsley

Instructions

  1. Preheat oven to 450°F.
  2. Line a baking sheet with parchment paper.
  3. Cut the cauliflower head into quarters.
  4. Remove the large stem piece from each quarter.
  5. Separate the cauliflower floret so they are 1-2 inch bunches.
  6. Place the cauliflower in a large bowl.
  7. Drizzle with olive oil.
  8. Add the additional ingredients (except for the flat leaf parsley).
  9. Toss together and place on a baking sheet and cook for 20-25 minutes.
  10. Half way through the cooking time flip the cauliflower to encourage even browning.
  11. Remove from the oven and place in a bowl.
  12. Garnish with flat leaf parsley before serving.
