Zippy Roasted Cauliflower
Ingredients
- 1 head cauliflower *
- 2 teaspoon olive oil
- 1 teaspoon dried rosemary
- ¼ teaspoon crushed red pepper
- ¼ teaspoon salt
- 1-2 teaspoons minced garlic *
- 3 tablespoons shredded parmesan cheese*
- 1 teaspoon minced flat-leaf parsley
Instructions
- Preheat oven to 450°F.
- Line a baking sheet with parchment paper.
- Cut the cauliflower head into quarters.
- Remove the large stem piece from each quarter.
- Separate the cauliflower floret so they are 1-2 inch bunches.
- Place the cauliflower in a large bowl.
- Drizzle with olive oil.
- Add the additional ingredients (except for the flat leaf parsley).
- Toss together and place on a baking sheet and cook for 20-25 minutes.
- Half way through the cooking time flip the cauliflower to encourage even browning.
- Remove from the oven and place in a bowl.
- Garnish with flat leaf parsley before serving.
