What is pasteurization?

Heating or pasteurizing milk kills the bacteria present and makes it safe to drink. In the United States, federal laws require pasteurization of milk. The Federal Government has set the legal pasteurization time and temperature as 161.5 degrees for 15 seconds. At Braum's, we go one step further by heating our milk well above these standards for a longer period of time to assure that it is free of bacteria and of the highest quality.
